In the witch's kitchen: Radish cream from the recipe book of Saint Hildegard of Bingen

Hildegard was not only a nun, but also a doctor, naturopath, composer and thinker. Her nutritional principles are still relevant today:
- we should eat seasonal foods,
- prefer home-grown plants,
- heal ourselves with the medicinal plants around us,
- consciously take care of our physical and mental health in our everyday lives.
The following radish cream can be an excellent companion to homemade sourdough bread for a pleasant snack outdoors. Radish strengthens the immune system and aids digestion, while onion cleanse the vascular system.
Ingredients:
- 1 bunch of radishes, without stems
- 100 g sheep's milk cream cheese/cashew cream cheese for vegans
- a few chives/shallots, chopped
- 1 tablespoon hemp oil
- salt and pepper
Preparation:
Grind the radishes in a food processor and let them drain in a sieve to remove excess water. Mix the radishes with the cream cheese, chopped chives and hemp oil. Sprinkle with salt and pepper. Serve chilled.
